Origin and history
The beginnings of a traditionAlthough it’s difficult to establish the origin of cheese production in the region of La Serena it is known that taxes were already being levied on this product in the Middle Ages. Various studies have shown that the fall in the price of meat from Merino lambs and sheep motivated the farmers in the region of La Serena to redirect their production towards the manufacture of cheeses. Due to this cheese production went from being a supplement to the family economy to being the farmers’ main source of income, who, by chance, discovered the double (triple) properties of a breed that up until then had only been used to provide meat and wool and which started to produce milk from which some excellent quality cheeses were produced.
